Brussels Sprouts. Not everyone likes them. But they are a part of the 3:6:9 cleanse.
I personally love Brussels. I grew up with them.
The German cuisine has some really nice recipes to offer.
Stew, bake, side dish,... you name it.
I had this idea of a salad this one evening. I imagined a stew,... just as salad.
I mean, the flavors of the stew.
And I am very happy with the result, this salad turned out exactly the way I imagined it :-)
It is a very simple to make salad,... but should be prepared one day ahead to get all the flavors.
For one serve you need:
7 big Brussels (ca 250g) - steamed al-dente
1/2 middle sized red onion - sliced
1/2 tsp caraway seeds - roasted
For the Dressing:
1/4 cup raw cashews
5 tbsp filtered water
1 tsp lime juice
1/8 tsp Nutmeg
1/8 tsp maple syrup
1 slice garlic
1/8 tsp pink salt
Garnish:
some fresh chopped chives
Directions:
1. steam the brussels for 10 minutes. Depends on the size, but you should use big brussels.
The brussels should not be to soft. They really should be al dente,
otherwise you will not get the leaves apart. When steamed,... cool down complete.
2. prepare the dressing. Add cashews and water into your food processor.
Process until creamy and smooth.
3. roast the raw caraway seeds in a frying pan with no oil. Until fragrant. Set aside and cool down.
4. Mix the dressing. Add all ingredients for the dressing and mix well. Just add a slice of garlic.
We just want a garlic note in the dressing. Just pop it in and leave it.
Add dressing into a glass jar with lid and refrigerate over night.
5. Try to get the leaves of the brussels apart. Cut the stem part and it should be easy to handle.
Add to a bowl with the sliced onion (can be more onion if you like)
and caraway seeds, mix well and also leave covered in the fridge over night.
6. After one night in the fridge, the flavors developed nicely. So bring the salad together.
Plate up and mix with the dressing,... I didn't use all of it, but feel free to use as much dressing as you like.
Finish with some fresh chopped chives and ...
