I really, really like this cookies. Really :-)
Who doesn't have an urge for something sweet from time to time!
I sure have. Even though I do not have a sweet tooth in general.
But actually, since I am doing the MM changes, I actually have a sweet tooth now.
And I love my afternoon coffee or tea.
And who doesn't love a cookie with it. I sure do.
Lemon is one of my favorite flavors when it comes to baked goods.
And Lavender,... I really love to add it to my herbal tea mixes. I bought an organic lavender tea.
And this tea, wow, when I open the package,... it really hits you with the beautiful smell.
The package contains the little "seeds" only. So it really is intense.
Lavender is a perfect product when it comes to calm down nerves.
It is used for a lot of health troubles, like fungal infections (there are studies about it),
wound healing, inflammatory and much more.
It is also good around in the bedroom, because it supports a good night sleep.
At the moment my lavender in my garden blooms everywhere.
And looking at it every day,... and cooking my herbal teas every morning,
I thought about what else I can use it for. And cookies popped into my mind.
Said,... and done :-)
I am pretty pleased with the result. And I kept it simple,... and MM approved.
So I hope people who follow the program will hopefully be delighted with it.
And hopefully feel good to eat it, because I know how it feels to be strict all the time.
But don't forget,... a cleanse does not take forever.
When you done your cleanse,.... normal returns and we are allowed to have treats within the guidelines, right.
So don't worry about the little fat in this cookies. It is good fat anyway.
And don't worry about the sugar. It is organic, raw and clean.
Talking about the sugar. I usually use coconut sugar.
But for this cookies I choose raw sugar because I want to keep the color light.
Coconut sugar always turns baked goods dark. I wanted light this time.
But when you feel better with coconut sugar and a darker color,... go ahead.
What I love about the cookies is. The lavender taste does not overpower and hits you.
On the first bite you taste lemon. And because the lavender seeds are here and there,
with some bites you get this lovely lavender taste, what really gets into the senses. Well, sure into mine :-)
Have fun in the kitchen,.... and enjoy this cookies.... you will need:
To make 14 cookies a 20g you need:
50g Millet flour
50g gf oat flour*
50g almond meal
10g Tapioca starch
30g organic raw sugar
10ml Maple syrup
10g vanilla sugar (homemade) or half a fresh vanilla pod (seeds)
1/4 tsp pink Himalaya salt
2 tsp fresh grated lemon zest (from an organic lemon)
1,5 tsp lavender blossom seeds (they look like seeds)
1/2 tsp baking powder
10ml almond oil
65ml almond milk
*add gf oats into a high speed food processor and grind until you get a fine flour.
Directions:
1. add all ingredients into a bowl and mix well. You can start with a spoon and finish with your hand.
It should be good to work out with the hand.
Wrap into cling foil and put into the fridge for about 3-4 hours.
2. preheat oven to 180C
3. use a kitchen scale. Remove dough from the fridge and cut lengths-way into half.
Cut into 20g pieces. Roll with your hands to a ball and use a fork to shape the cookies.
Just softly push down with the fork in one direction,... turn and do similar to the other side.
The dough will be a bit sticky. So use some flour on your surface and dip the fork also into the flower before you shape.
Makes it easier to remove from the working surface.
4. Add on a baking tray with baking paper. And bake for 25 minutes.
5. Remove from the oven and cool down complete. Store in a cookie metal box.
