It is getting warm outside. Spring is in its full bloom!
So the season of salads and co starts for me.
I really like European Coleslaw. I love it actually.
It is made with white cabbage, vinegar and sunflower or olive olive oil.
I love to serve this with my Greek and Croatian food.
During the MM program I didn't use vinegar.
I actually like the almost vinegar free life.
At this stage I sometimes use some very small amounts of apple cider vinegar again.
All my life I was actually a vinegar "junky", haha.
I LOVED vinegar. And I always was the one drinking the vinaigrette at the end of my salad.
Yes, that was me.
Now, I got very used to the lemon version. And it mostly always works for me.
I know that all the MM followers love to get some recipes for pickled salads and things.
I created this salad years ago. At the beginning of my journey.
And I think it really is a nice recipe.
Specially when you want something for your work, school or just on your way.
For me this fresh salad is a nice snack. And served as side dish for rissoles or falafel, pretty good.
Also in addition with a sandwich or wrap, when you are on your way somewhere, at work, or on a trip.
This is a very simple and quick to make salad.
I always make it a day ahead, because it tastes so much better after a longer rest.
For 2 serves I used:
2 cups of white cabbage - fine sliced
1 middle sized carrot - grated
1/2 a small red capsicum - fine sliced
1/2 an apple - fine sliced
2 radishes - sliced
1/2 small onion - fine sliced
1 small clove of garlic - finely chopped or for more garlic flavor, grated
1/4 cup fresh Italian parsley - chopped
the juice of half a middle sized lemon - approx. 1 tbsp
1 tsp maple syrup
1 tsp filtered water
1/2 tsp caraway seeds
pink salt for seasoning (as much as you like)
Direction:
1. Prepare everything - cut, slice, chop ---- and add everything into a bowl.
2. Add lemon juice, maple syrup and season with pink salt.
3. Stir well to combine, add into a jar and store in the fridge.
4. ENJOY

make this ahead! I personally like it with a 2 day rest. But one day ahead should already give you a good result.
