Yes, I am in an absolute sesame fever at the time, haha.
But, sesame is SO good.
Plenty of nutrients like zinc, calcium, iron, selenium and more.
And so tasty!
After working on breads, I got this idea of a little cake.
Sesame and raspberries just work perfect together in my opinion.
I did a little secret Facebook vote. I ask...
Raspberries or Blueberries
The votes actually went to "both" - haha,... ok, why not.
I baked both. Blueberries are fine with this tarts.
But to be honest, the raspberries are IT for me.
Feel free to use blueberries instead. But I tell you, at least use both.

This recipe is for 4 mini tarts.
And all you need is:
80g Millet flour
20g white sesame flour
20g almond meal/flour
5g golden flax-seed flour
5g Tapioca starch
5g baking powder (if possible, Aluminum free)
5g Vanilla sugar
20g certified organic raw sugar
10ml sweet almond oil
1 pinch of pink salt
200ml unsweetened almond milk
as many frozen raspberries as you like
1 tbsp sesame seeds (or more if you like)
optional: organic icing sugar to finish
Directions:
1. preheat oven to 180C / 356F
2. use mini tart forms - spread a tiny little bit of almond oil to make them non stick.
If they are already non stick, skip this step.
3. add all ingredients, (except of the raspberries and sesame seeds),
into a bowl and whisk well to a smooth batter.
The batter will be more fluid at the start, but will turn consistency.
So keep whisking. After a short time it will thicken up a bit.
The batter will appear a bit jelly like,... but that is ok,... don't worry.
4. fill the batter into your forms. Sprinkle generously with sesame seeds and top with frozen raspberries.
I recommend to not defrost the berries.
5. bake for 35minutes in the preheated oven. Remove from oven when done and set a side to cool down.
6. finish with some icing sugar and ENJOY :-)
This tarts are perfect for a picnic, lunchbox or bake-sale.
Actually, I will do this tarts for the next Farm Animal Rescue bake-sale.
