Cinnamon Stars - I just LOVE them. I always have to bake them.
Christmas and Cinnamon belongs together in my opinion.
The smell, the taste,... just BEAUTIFUL!
Cinnamon is rich in antioxidants and other beneficial compounds.
Research suggests that it may help support blood sugar control,
protect against heart disease, and reduces inflammation.
It also can help to regulate insulin and may have benefits on neurological issues
There are 2 types of cinnamon.
Ceylon cinnamon: This type is also known as “true” cinnamon.
Cassia cinnamon: This is the most common variety and what people generally name “cinnamon.”
But be careful with that one. It contains coumarin, what can be harmful in large doses!
The Ceylon version has much less of the harmful coumarin.
Better to go with that one if you need a bit more like for this cinnamon stars.
To make approx 20 stars you will need:
(This is the MM friendly version, no vegan butter)
100g Millet flour
60g gf oat flour
50g hazelnut meal/flour
20g Tapioca starch
1tbsp (5g) Cinnamon spice powder
30g organic raw sugar
20g coconut sugar
1-2 tsp (5g) Vanilla sugar
1/4 tsp sea or pink salt
20ml hazelnut oil or cold pressed organic olive oil*
70ml filtered water
organic icing sugar (if possible aluminum free)
1 tsp cinnamon spice powder
* I would not go with coconut oil because of its own stronger taste.
The stars would have a coconut taste and we do not want this here.
Hazelnut would be best. But Olive oil works just fine as well.
NON MM version - vegan gluten free version:
100g Millet flour
60g gf oat flour
50g hazelnut meal/flour
20g Tapioca starch
1tbsp (5g) cinnamon
1 tsp - 2tsp (5g) vanilla sugar
1/4g sea or pink salt
70g Nuttelex margarine
65ml filtered water
Organic icing sugar
Direction:
1. Sieve the flours into a bowl. Add all other ingredients and mix well to a dough.
Wrap into cling foil and store in the fridge for 24 hours.
2. heat your oven to 190C
and get some extra flour for your working surface.
3. Remove dough from the fridge, unwrap and half.
I always use just half of it first and return the rest into the fridge.
Knead through the dough a little bit to make it workable.
Roll the dough on your floured surface to about 1cm in thickness.
Use a cookie cutter, a star to cut the cookies.
Continue until all your dough has been used!
4. place on a baking tray with some baking paper.
5. place tray into the oven and bake stars for 15-20 minutes.
6. Add icing sugar into a bowl and mix with the cinnamon and a bit of vanilla sugar.
Remove cookies from the oven and let them cool down a little bit.
Add still warm cookies in the icing and cover well.
Store in a cookie tin.
TIP:
I also did a couple of stars with a liquid icing.
I just mixed icing sugar with a tiny amount of water and topped the stars with it.
Finished with a sprinkle of mixed sugar and cinnamon - left to dry. Done.
