What better food to eat on a hot and humid day than a refreshing salad, right!
Radish, Orange, Cucumber and onion --- fresh dill,
with a simple lemon/maple dressing,... done. How does that sound.
Simple and delicious. Can't get easier than that, right!
With a fresh piece of bread, this salad is a delight.
Colorful and fresh.
This is a recipe for just one serve.
Ingredients:
4 radishes - fine sliced
1 small orange - cut into wedges
1/4 of a lebanese cucumber - halved and sliced
1/4 of a red onion - sliced
1 tsp fresh chopped dill
For the dressing:
The juice of half a small lemon
1/2 tsp Maple syrup
1 pinch of pink salt or sea-salt
optional: a small splash of extra virgin olive oil - cold pressed.
Just add all ingredients to a bowl and mix well. Give it a 15 minute rest in the fridge before you eat it.
TIP: If you are ok with beans, add white beans or Cannelini beans to the salad!
Serve with fresh bread of your choice....
