I was pretty happy when I saw sugar plums at the stores.
Here in Australia, sugar plums are not that common.
The big, round ones are grown here.
Sugar plums, the small ones with the football shape,
the fruit & veggie stores mostly offer a small stock of sugar plums and just for a short time.
At the local supermarkets, I am not sure if I saw some so far.
In Germany, different story! Sugar plums are everywhere during plum season.
And the bakeries are full with plum cake (and wasps! They love it, too! ).
I always LOVED plum cake. The traditional one is baked with a yeast dough.
This decent yeast flavor in the cake, combined with the juice, sweet plums,... YES.
But, if you do not feel comfortable with the yeast because you do a detox program,
skip the yeast and add more baking powder instead. It will be delicious anyway.
The supermarkets stock sugar plums for the complete season.
Also the fruit shops and market stalls.
And I remember well,...
...my Austrian grannies place, in front of her apartment, a huge plum bush. It was not really a tree.
More like a huge hedge. And I never could wait to pick some plums.
The downside always was,... we mostly visited her when the plums were not ripe.
But as a kid, I picked them anyway, with a lot of hope they are sweet and juicy.
Of course they never were. Already the color told me, they are not sweet at all.
Still greenish, haha. And the first bite was like biting into a lemon,... urrrggggg,....
Nice plum memories :-)
Here in Australia, we just have plum season. And my local fruit store actually stocks some sugar plums.
Of course I had to get them to bake a plum cake.
It is an easy to make cake. And it always is made on a baking tray.
I used just a small one.
32cm x 18cm
And here is what you also need:
700g of sugar plums - cut in half and stone removed
100g white rice flour
50g Millet flour
50g almond meal
2 tsp golden flaxseed fine meal
1 tsp Tapioca starch
25g organic raw sugar
2 tsp Vanilla sugar
1 tsp baking powder
1 tsp bakers yeast***
280ml almond milk
1/4 tsp pink salt
some cinnamon powder (NOT into the dough)
***if you do not feel comfortable with the yeast, don't use it and add 1/2 tsp more baking powder.
Directions:
Preheat oven to 180C
1. cut plums in the middle to half them. Carefully separate and remove the stone.
2. add all the ingredients for the dough into a bowl. Also the yeast.
This is more about flavor than rising agent.
Mix well to a smooth dough. It will be a bit sticky first. Set a side for 5 minutes.
3. use baking paper for the baking tray. Add dough and spread even into the tray.
This should work with using your hands just fine. But you also can use a spoon.
Using your hands, maybe slightly wet your hands. Or use oil.
4. top with all the plum halves. Sprinkles with a dash of vanilla sugar and a dash of cinnamon evenly.
5. add into the oven and bake for 45minutes - 55minutes.
Remove from the oven and cool down complete.
