Asparagus is a great liver supporter and cleanser.
Also perfect for the kidneys!!!
So in both cases you do your organs a huge favor.
At the time I eat steamed asparagus.
But slowly I get a bit sick of it. Even I really like asparagus.
I have to support my kidneys because of medications I had to take.
I actually prefer the white asparagus I grew up with. Unfortunately it is not available in Australia.
So green asparagus it is,... what is delicious as well.
Because I slowly get bored of steamed asparagus, I had to change something.
Give it more flavor and mix it up to make it interesting again.
So I thought about it and a salad came into my mind.
This is really a nice option. My partner also liked it pretty much.
It is quick and simple to make and a fantastic lunch or dinner add.

For the salad (2 serves) I used:
2 bunches of asparagus - cut into pieces and steamed until softened (not to soft)
1/2 small onion - fine sliced
some tomatoes (as many as you like) - quartered
fresh parsley (1/4 cup) - chopped up
For the dressing I used:
1/2 tsp almond butter
1/2 tsp un-hulled tahini
the juice of half a middle sized orange 50ml
the juice of half a small lemon 25ml
3/4 tsp maple syrup
1 pinch of salt
1/8 tsp turmeric powder
1 pinch of black pepper
7 thin slices of a small clove of garlic***
*** I just added thin slices of garlic to give the vinaigrette just a note of garlic.
I didn't want to overpower it, because the onions should be the part what give this salad a really nice taste.
Direction:
1. Prepare the dressing. Mix all ingredients into a small bowl and set aside.
2. Steam your asparagus until done. Cool down to lukewarm.
3. Add lukewarm asparagus, onion, tomatoes and parsley into a bowl.
Add the dressing and mix well to combine.
Store in the fridge for one hour (or longer) and enjoy for lunch or dinner.
TIP:
I am sure you also can add cooked, cold potatoes to this salad. A kind of potato & asparagus salad.
I often use this dressing also for my potato salad.
