Sweet potatoes are actually not one of my favorite foods.
I like them raw (but actually never eat them raw), but cooked they are to sweet for my taste.
Roasted in the oven like chips is a nice option. But that is pretty much it for me.
Sometimes I mix sweet potato into my mashed potatoes.
That is a nice option to. But this really is it for me, haha.
But, because it is part of a cleanse and diet change I went through,
I created a spread for my sandwiches/buns.
It doesn't contain any fats, soy, gluten or everything else.
But feel free to add a splash of cold pressed extra virgin olive oil if you like. It is optional.
The spread is simple to make and a delight on a sandwich. Really!
It is also a nice dip. So when you like to enjoy some crackers or chips etc,... this also is a nice dip :-)
Sweet potatoes are full of nutrients. A great source of fiber.
It is a great source of Potassium, Vitamin A and B6.
Magnesium, Iron, Calcium,... and it is high in antioxidants!
For one glass of this spread you need:
2 smaller sweet potatoes - streamed until soft
1 middle sized clove of garlic - grated
1 spring onion stalk - halved and chopped up
1/2 a small red capsicum - finely chopped
1 small bunch of chives - chopped
1/4 tsp turmeric powder
Juice of half a small lemon
1/2 tsp (or more if you like) pink salt
1 splash of filtered water (approx 1/2 - 1 tbsp)
Direction:
1. remove skin from the sweet potatoes and cut into smaller cubes.
Steam until soft. If you do not have a steamer, cook in filtered water until soft.
Cool down complete.
2. Add the steamed potatoes to a food processor/kitchen machine.
Add the fresh garlic, lemon juice, salt and water.
Process until smooth. But it should be not to smooth/liquish in consistency. So do not add to much water.
When ready, add to a bowl and mix with the capsicum, chives and spring onion.
Add to a glass and rest in the fridge for a couple of hours. Done ... ENJOY
Tip:
the water you cooked the potatoes in ... drink it!
