Hazelnuts!
One of my favorite nuts. When choosing ice cream, Hazelnut is one of my favorite (right after Vanilla).
I love hazelnut cake. Always did. I think the combination of hazelnut and dark chocolate is just divine.
Hazelnuts are a good source for Vitamin E. And B vitamins.
Copper and Manganese are the top minerals.
But also a source of Selenium, Zinc, Iron, Calcium and Magnesium.
Sounds all good to me. But most important,... they really taste good. Specially roasted.
I choose to not use any refined sugars here. Not even coconut sugar.
I wanted to keep it rich in nutrients. So I used genuine Maple syrup as sweetener.
Also a good source of Manganese, Copper, Riboflavin (B2) and Calcium. But also very rich in antioxidants.
Very rich!
But you need the real Maple syrup. Not the sugar water what is just maple flavored.
The price at the supermarket will tell you.
And I choose dark chocolate this time. Usually I go with a fine icing sugar dusting.
But Hazelnuts really scream for dark chocolate.
Dark chocolate,... very rich in Magnesium and Iron.
So all together ---- this cake is just a really good nutrient source, hehe.
And VERY tasty. We just enjoyed a slice of it. A good cup of coffee,... a slice of this cake.

To make one cake you need:
120g white rice flour (organic if possible)
120g millet flour (organic of possible)
100g Hazelnut meal/flour (from the baking section)
100ml genuine Maple syrup
1,5 tsp baking powder
1/4-1/2 tsp pink salt
20g Tapioca starch
10g Vanilla sugar (homemade if possible)*
25ml sweet almond oil
300ml plant based milk of your choice (except of coconut milk)**
*I use a mix of organic coconut sugar and raw sugar with fresh vanilla seeds and skin.
You also can use just the vanilla seeds.
** I used Bonsoy Japanese soy milk
For the topping:
1 block of 71% organic dark chocolate (I used the Aldi one)
approx. 50g raw hazelnuts - roasted
Directions:
1.
Preheat oven to 180C
Add all ingredients for the batter into a bowl and mix well to a smooth batter.
2.
Lay baking paper into a loaf cake baking dish and add the batter.
Bake for 55 minutes. Do a wood skewer test. If the skewer comes out clean, the cake is done.
Remove from the oven and cool down completely.

Use the heat from the oven to roast your hazelnuts. Just add on a baking tray and roast until fragrant.
Cool down completely. But don't roast on 180C - if you do, don't do it for long, otherwise they will burn.
You also can use a frying pan to roast the nuts. But I personally prefer the oven version.
The nuts turn out more fragrant with the oven.
4.
Melt the chocolate in a bowl over boiling water. Just use a pot with water and bring to the boil.
Hold the bowl with the chocolate pieces into the steam and melt the chocolate carefully.
Add hazelnuts into a mortar and break down to small pieces.
5.
Cover the cake with the melted chocolate and top with the hazelnut pieces.
Cool down completely.
