Goulash. One of our favorite winter dishes.
Served with either salt potatoes, spiral pasta or German dumplings.

I ate a lot of Hungarian Goulash in my life. It was a typical Sunday lunch mum cooked in the colder season.
When we turned vegan, it took me a while to get the great flavors without the meat.
But, it all came together and today, I miss out on nothing.
But the vegan only way contained "nasty" things like processed meat and stock cube season.
With the MM program, I could change that.
Jack fruit for me works pretty good. But you also can use a good quality firm tofu (gmo free and organic)
when you feel like it,... or banana blossom, what I personally prefer now.
For me, banana blossom really works for everything.
But its up to you what you want to use.
Important is, whatever you use, fry it on high heat before you add it to the Goulash.
For a 2-3 serves you need:
250g organic champignons (button mushrooms) - sliced and quartered (mixed)
100g fresh red capsicum - sliced up
360g onion - sliced
10g fresh garlic - chopped
1 tbsp extra virgin cold pressed organic olive oil
1-2 tsp pink salt
1/2 tbsp coconut amino acid bbq style
1,5 tsp tomato paste
2 tbsp Hungarian ground paprika
as much cayenne pepper as you want (and handle ...)
1 middle sized bay-leafe (fresh picked if you can)
400ml water ( 100ml added at the end of the cooking process)
1 can of young jack-fruit (or banana blossom!)
Direction:
1. heat the oil and fry the onions on high heat until golden.
2. add the garlic and mushrooms and fry for a couple of minutes. (also on high heat)
3. add the capsicum,... deglaze with the coconut amino sauce and water.
4. fry the jack-fruit in a separate frying pan until golden (with high heat),.... and added to the goulash.
5. season with the spices and simmer for 30 minutes (low heat).
Turn off the heat and rest for about an hour and a half.
As longer the goulash gets a rest,... as better. So maybe cook it one day ahead.
Serve with cooked potatoes, spiral pasta or German dumplings,... and ENJOY :-)
