With this recipe I was inspired by 2 German dishes. Königsberger meatballs and fish in dill sauce.
Both dishes are really popular in Germany. Every kid loves Königsberger meatballs. It is just a classic.
And most people love braised fish in dill sauce.
I cooked a sauce based on Königsberger meatballs. But with a little bit of dill. I didn't want this dish fishy.
So I thought about what to use as meat replacement. I didn't want to use tofu or processed meats.
And I remembered that cooked this dish with turnips ones. And also with Jerusalem artichokes.
But because both of them are not available all year, I also gave Swedes a go.
You can use both. Turnips or Swedes. Both are good to go for this dish.
And if you can get Jerusalem artichokes,... I personally loved it.
It is easy to cook and healthy.
Try to get all ingredients organic.
You serve this dish with salt potatoes. I never enjoyed it a different way,
but I think long grain rice would be an alternative if you don't like potatoes.
But,... potatoes are so good for us.
So I am sure the people who follow a special detox program will be happy with this dish the way it is.
As for the mustard. I used Thomy mustard. A German brand what is also available in Australia.
Woolies often stocks it at the foreign sections. And some fruit stores also stock this mustard.
The mustard has not many ingredients and no nasty adds.
I know there is vinegar in it.
But remember, the detox program says to avoid excessive vinegar use.
And this 2 tsp in my recipe are not excessive use. The amount of vinegar in it is just minimal.
You probably share this dish with someone as well. Or you have lunch twice.
It is not a serve you eat on your own in one go. So relax. Its fine!
Ok, lets get started with the ingredients.
Makes 2 generous serves. We are big eaters, so this serve was for 2.
But when you are not a big eater, you sure can feed 3 people with it.
You will need a pot with lid and a frying pan with lid.
Step 1
For the stock you cook the swedes in:
550ml filtered water
1 tbsp lemon juice
1/2 tsp pink or sea salt
10 small or 5 bigger Pimento seeds
1 middle to big sized bay leaf
For the creamy sauce:
30g capers
1 tbsp of the caper juice (for detox followers, optional)
2 tsp mustard
1/4 tsp pink or sea salt
1/4 tsp lemon zest
2 tbsp fresh chopped dill
1 tsp cold pressed organic olive oil
For the cream:
50g raw cashews
230ml filtered water
You also need:
500g Swedes - take skin off and slice in approx. 1cm thick slices.
1/2 middle sized onion - chopped
Directions:
1. Prepare the swedes. Remove skin and cut into slices.
2. add all ingredients from step 1 into a pot. Add the sliced swedes and bring to the boil.
Turn down heat to a middle simmer and cook for 10 minutes. Just cook them al-dente.
3. Remove swedes from the brew.
4. Heat the oil in a frying pan and fry onion until slightly golden. Add capers.
5. Deglaze with the cashew cream.
To make the cream just add cashews and water into a high speed blender and blend until creamy.
6. The sauce already should start to thicken.
Add all ingredients for the sauce and also add the brew where you cooked the swedes in.
Stir constantly on middle heat. Add the brew step by step. Not all at once.
And you probably will not use all of the broth up.
Just as much to get a nice gravy what covers the swedes.
Add the swedes to the sauce.
7. Shut the lid and cook for 10 minutes on a low simmer.
8. Turn off the heat and give it a rest of 10 more minutes.
Serve with salt potatoes and ENJOY :-)
