Sometimes it is not easy to find a new kind of breakfast.
Specially when it has to involve fruits and no gluten. Some people also don't want grains for breakfast.
So this can be a challenge. I know what I am talking about, haha.
I personally struggle to add more apple to my diet. I admit, the apple is not my favorite fruit.
But I love apples as compote, apple sauce, cake and Strudel.
On the other hand, I love bananas. I eat them every day. Always one for breakfast.
Also as snack in between. I love banana cake, yogurt,... you name it.
So why not pair a fruit I don't like that much with one, I really love!
I think this very simple breakfast is a great option when you struggle with apples like I do.
I really enjoyed this kind of breakfast.
You can stay with the banana porridge raw, like I did.
But you also can heat it up to have a complete warm meal. Your choice.
I love both versions.
To make this very simple breakfast
you need to make one serve:
2 middle sized bananas - mashed up
1 tsp fresh lemon juice
1 middle sized apple - cut into smaller pieces (skin on)
1/4 tsp cinnamon spice
1/4 fresh vanilla seeds or alcohol free essence (optional)
1 tiny pinch of pink salt
1 tbsp raisins or sultanas
1-2 tbsp maple syrup (or more if you like)
Directions:
1. Mash the bananas up with a fork, add the lemon juice and mix well,
and add the porridge in to a nice bowl.
You can also heat it up in a pot until warm if you like.
2. Heat up a frying pan (NO OIL!) and add the apple pieces.
Fry for 5 minutes and deglaze with the maple syrup. Turn the heat down to a light simmer.
3. Add raisins/sultanas, cinnamon & vanilla and simmer for 5 more minutes.
Turn off the heat and leave for a 3 minute rest.
4. Top the banana porridge with your apples and ENJOY a good start into a new day :-)
