I recently bought a mini waffle maker. It just caught my attention at my local supermarket when I saw it.
I thought, I always wanted to have one. And this mini version is a great option to start with.
I am SO happy I got this kitchen tool. My new toy :-)
Waffles are something I always enjoyed a lot, but actually never made, haha.
I never owned a waffle maker. So I straight away made some. I just mixed flours I thought will work great.
And yes,... I was very pleased.
The past days I experienced around with the flours.
Because, one of the flours I used was/is Millet flour. It works great and I like the taste.
But, I slowly run out of the flour.
My organic store is out of stock for weeks and my health food store has a brand I do not want to buy.
So I looked out for an alternative. I choose Besan flour. It also worked fine, but it turns the waffles more dry.
With the topping it sure is ok, but I personally prefer it more moist.
But I will provide both my options anyway. Just in case you also run out of Millet and can't get it at the stores.
Besan is a flour every supermarket stocks at the Indian section.
I love to have my waffles in the morning, on the weekend. I actually make them ahead, because I SO love them toasted up.
So crispy, it is just really pleasant to eat. I love vegan honey (rice malt syrup) and banana on it.
But I also made some wild blueberry/blackberry kind of a yam. I enjoyed that pretty much as well.
With some maple syrup, yes,... very nice indeed :-)
I have actually a couple of ideas with waffles. So this recipe is my base recipe, for the sweet version.
I keep it lower in sugar anyway, because of the sweet topping. But when you want them more sweet, just add more sugar!
Makes 5 mini waffles:
You need: a mini waffle maker
Base recipe...
60g Millet flour
40g gluten free Oat flour*
10g Tapioca starch
2 tsp (4g) Psyllium Husk
20g homemade Vanilla sugar**
1/2 tsp (3g) baking powder
1/4 tsp pink salt
170ml filtered water when you want a fat free version,
otherwise use whatever plant milk you like.
I would go with Almond milk or Bonsoy soy milk
*just use gluten free oats and blend/grain in your food processor until you get a fine flour.
I always use my Ninja Bullet for it.
** I always make my own vanilla sugar. Just mix fresh vanilla pot seeds with coconut sugar and organic raw sugar.
And also add the skin. I always add the skin of a vanilla pot I used for this. Perfect to give sugar vanilla flavor.
Alternate recipe when you ran out of Millet:
50g Besan flour (chickpea flour)
50g white Sorghum flour
10g Tapioca starch
2 tsp (4g) Psyllium husk
1/4 tsp pink salt
20g homemade Vanilla sugar
1 tsp baking powder
130ml filtered water or plant based milk of your choice
Directions:
1. add all ingredients into a bowl and mix well. Give the batter a rest of 10-15 minutes.
2. heat your waffle maker like directed.
3. add batter to the waffle maker and bake. Done.
TIP: what I also like to do is,... mixing some organic raw sugar with cinnamon.
And when I add the batter to the waffle maker,
I also sprinkle some of the cinnamon sugar on top before I close the waffle maker.
A little add to this recipe.
If you also like to try the wild blueberry/blackberry topping,
here is the recipe:
100g frozen wild blueberries
50g frozen blueberries
50g blackberries
1 tbsp lemon juice
10g Vanilla sugar
1/4 tsp cinnamon
6g potato starch mixed with a small splash of water
Direction:
1. Add all ingredients, except for the starch, into a pot and bring to a simmer.
When it starts to simmer, add the starch and mix well. That will thicken the berries.
2. Turn off heat and add into a glass container. Cool down. Refrigerate.
