I recently baked this muffins for a little event.
I thought you never can go wrong with chocolate. Right!
But I thought plain chocolate muffins are boring. Kind of. And because I love hazelnut,
I choose to bake chocolate & hazelnut. For me, a perfect combination!
I know chocolate is off the shelf for most of the detox people who follow a special program.
But,... cocoa has a lot of really good nutrition's.
Plain cocoa powder is a massive source for magnesium, and a great source of iron!
It also provides a decent amount of calcium and Vitamin B6.
So for me, the nutritional benefits are pretty in front.
And when you have no troubles with caffeine, you should go for the nutrition.
One or two muffins will not keep you awake at night or something like that, haha.
The amount of caffeine in one muffin is really low. Maybe a sip of coffee? Something like that.
But feel free to replace with carob powder.
For me carob is not really a chocolate replacement, because the taste is different.
But the color is similar. And I know a lot of people who just love carob.
So feel free to replace the cocoa.
For everyone else, stick with the chocolate :-)
I personally love muffins. Great for a picnic or for the lunch box.
I store them in an air tight box, like a tupper container, to keep the muffins fresh.
I always love to play around with gluten free flours. During the past 4,5 years I figured out,
that every flour gives a different either taste or texture to baked goods.
I have a lot of disasters. But when I figured the perfect mix out, that ends up here on my page.
For this chocolate hazelnut muffins, those 2 flours worked best for my taste.
And the people who ate it not even realized they were gluten free :-)
I also kept added fat out of this muffins.
The cashew milk already contains enough fat to keep this moist.
All in one I think this is a great afternoon (like in my case) or a morning tea (like in my partners office) treat.
Enjoy with a cup of coffee or actually a glass of cold unsweetened plant based milk!
I personally love this combination. But a coffee is mostly what I enjoy with it :-)
Ok, here is my very simple recipe.
Simple is best, right! Always works for me, hehe....
Ingredients
to make 8 muffins:
5 tbsp white Sorghum flour
5 tbsp gluten free oat flour
3 tbsp hazelnut meal
1 tbsp Tapioca starch
2 tsp vanilla sugar or half a fresh vanilla pod
2 tbsp certified organic plain cocoa powder*
2 tsp Flax-seed flour
1,5 tsp baking powder
5 tbsp pure Maple syrup (not the cheap sugar water mix)
1 pinch of pink salt
300 ml cashew milk***
Optional: organic dark chocolate chips for topping
*when you want to use Carob, I actually don't know how much to add to get it tasty.
But I guess I would go with same amount. Just have a taste from the batter to figure it out.
That's what I always do,... this is the best fun part in the kitchen for me :-)
*** I always make my own milk out of 50g plain cashews and 500ml filtered water.
Mixed well in my high speed blender. And that is already it. Just raw cashews and filtered water.
You do not need to soak the cashews in water for hours to do that.
When you have a high speed blender, it is not necessary. Just blend it up straight away.
Directions:
Preheat oven to 180C
1. step one - make the cashew milk.
Add the cashews into your high speed blender with filtered water,... and blend.
My machine makes it in about 2 minutes. Don't strain the milk. Use it like it is!
Step 2 - mix all ingredients, except of the chocolate chips into a bowl and mix well to a smooth batter.
2. Add cupcake or muffin paper into a muffin tray and add the batter even in all papers.
3. Top with some chocolate chips and bake for about 25-30 minutes. Depends on the size of your muffins.
I used middle sized cupcake cups and filled them 3/4 with the batter.
Test with a wood skewer if they are baked trough,... when the skewer comes out clean, they are done.
4. Remove from the oven and cool down complete.
