This is a recipe what actually was planned for something else.
It turned into a complete disaster and ended up as really good dish for lunch.
I was so in the mood for Greek Zucchini fritters with Tzatziki.
But the fritters stuck to my frying pan. It actually is a non stick frying pan, haha.
Which usually works pretty good. But not this time.
I did use a bit of olive oil to fry the fritters.
I wanted them crispy on the edges. That never happens with no oil frying.
So I just used a little bit of olive oil.
And because of the taste. Olive oil simply gives this great Greek taste to dishes.
And I just love it.
Unfortunately, it was impossible to turn the fritters.
Everything stuck and I only could push/mash everything together.
I ended up with a big mash in my pan.
So plan B was,... adding everything into my 1 serve sized quiche dishes and bake it.
And hope for the best, haha.
That was a good idea. It was SO good. My partner was actually impressed with that dish.
I served it up with my Tzatziki I already prepared the day before.
A salad on the side - PERFECT.
And because we harvested a lot of leek that day from our garden, I also added some leek.
That really is a very nice combo.

To make 2 serves you will need:
600g Zucchini - grated
40g Leek (green part) - finely sliced
2 tbsp gluten free oat flour
10 tbsp besan flour or millet flour
1,5 tsp Tapioca starch
1/2 tsp good quality cinnamon
1/2 tsp pink salt (more if you desire)
100ml filtered water
Kalamata Olives as many as you like
Direction:
Preheat oven to 180C
1. grate the zucchini into a bowl. Add the sliced leek.
Add all other ingredients, except of the olives, and mix well to a batter.
Add to small quiche dishes (1 serve size).
Top with some olives.
If you feel ok with olive oil, spread the dish with some before you add the batter.
2. Add to the oven and bake until golden. That should take approx. 30-35 minutes.
3. remove from the oven and serve with a side salad and some Tzatziki.***
