Tzatziki
One of my favorite dips.
I never miss out on it when I cook Greek. Mostly, depends on the dish.
But when we do a bbq Greek style, I always make Tzatziki.
Back in Berlin, haha, you actually could smell when someone visited a Greek restaurant.
Nobody can hide the garlic in Greek food.
Actually, here in Australia, I was a lot dissapointed about how Tzatziki is made.
The garlic part often is just a hint. It is more of a cucumber yogurt.
Well, I always make my own Tzatziki.
With the garlic, feel free to use as much or less as you like.
For the recipe I do a good garlic flavor, but not overdo it.
For our personal taste buts, I would add a little bit more, but for the recipe it is just right I think.
Tzatziki is perfect in summer. With some fresh Turkish bread, olives, and a salad, can't get better than that.
Or for a bbq. I love to make banana blossom Souvlakis. Tzatziki is never missed on our table with that.
We also love to have it on a sandwich. Just like that. Or as dip for chips or something like that.
My recipe is the most simplest version I do.
Sometimes I do my own version, but mostly I use the yogurt from the store.
You can use whatever yogurt you like. But plant based of course.
For me, coconut yogurt works the best.
I use the Coles brand one. That yogurt also has the lowest fat.
So when you are in Australia,... Coles brand it is.
And here we go,... very simple, very quick to make.
Ingredients:
200g Coles brand plain Coconut yogurt (its also certified organic)***
100g fresh cucumber - grated
1/2 tbsp fresh lemon juice
1/4 tsp pink salt
5g garlic - grated
1/2 tsp cold pressed organic olive oil
1 tbsp fresh dill - chopped
Olives for decoration
***or, to make a really good Tzatziki, make your own yogurt!
Since I turned vegan 14 years ago, I never made a better Tzatziki than with my homemade yogurt.

Directions:
1. prepare one day ahead! Or at least in the early morning when you want to enjoy it for dinner.
2. Grate the cucumber into a paper or dish towel. Don't remove the skin.
Remove water by squeezing the cucumber in the towel.
3. Add yogurt into a bowl and add the cucumber.
Add all other ingredients and mix well to combine.
4. chill in the fridge.
5. ENJOY
