I always love to make a salad from leftover pasta. It always is a nice add for dinner, right.
Or a bbq,... or for the lunch-box.
And it is Spring season. For me, the season of salads and picnics :-)
For this salad I also tried to stay away from vinegar and mayonnaise.
My favorite pasta salad is a German one, but it contains mayonnaise.
I will do a recipe for that salad as well,...
I think I did a really nice job with this non mayo version. My sweetheart really liked it!

...he ate the rest of it what I kept for myself for next days lunch, later in the evening...
without asking - salads gone!!! haha.
And here is what I used for my salad what made my sweets sneak to the fridge secretly again...
Ingredients:
3 cups cooked gluten free pasta of your choice.***
3 middle sized spring onions - fine sliced
1/2 of a small red onion - chopped
2 middle sized radish - halved and fine sliced
1/2 red capsicum - cubed
10 stripes sun dried tomatoes**
7 - 10 garlic & herb marinated green olives - quartered
1/2 - 1 tbsp of the juice from the marinated olives****
Optional: 1/2 tbsp extra virgin olive oil
1 tbsp of the olive juice marinate from the package
1 tbsp fresh chopped dill
1 tbsp fresh chopped parsley
1 sprinkle of pink salt for seasoning
1 sprinkle white pepper
Optional: vegan Feta cheese (Bio) - crumbled
*** I used organic rice & quinoa pasta. But buckwheat pasta works also fine.
** I found sun dried tomatoes at my organic shop which do not contain added sulfate.
**** the olives we use are also from our organic shop.
They do contain garlic, herbs and just a bit of organic olive oil.
Directions:
1. if you do not have leftover pasta, cook some pasta and cool down.
2. prepare all the ingredients and add all into a bowl.
Mix well and chill for a couple of hours.
I made this one day ahead. It really develops flavor when prepared one day ahead.
Enjoy this salad on its own or add as a side dish for your next bbq.
It also is great for a buffet for your next party.
