I cooked a Curry recently. And I love to serve some Naan bread with it.
I ran out of the flour I usually use, so I used Buckwheat.
The result was, that I got a really nice Arabian flat bread.
And it was so good for the Curry as well.
For dinner I was in the mood for something different than we usually have.
So I made this flat bread, topped it with Tzatziki, fresh parsley and tomato.
How good was that!!!
Crispy, tasty,... really, really good.
And so simple to make. The dough works perfectly.
It doesn't fall apart or crumbles like they often do.
And I am very pleased to work this out with my hands. Its fun :-)
This bread is perfect for falafel platters with Hummus.
For Curries and as kind of sandwich. During cooking process it even puffed up a bit.
Like I know from Turkish and Arabic bread.
Lets get started.
This recipe is just for 2 small breads.
But if you want more, just double the ingredients.
For me I always make them fresh before I serve them. For dinner 2 are enough for me.
You need:
1/4 cup + 2,5 tbsp Buckwheat flour
1/2 tbsp gluten free oat flour***
1/2 tbsp tapioca flour
1 pinch of pink salt
50ml filtered water
*** blend gluten free oats in your high-speed blender.
Directions:
1. add all ingredients into a bowl and mix together with a spoon.
When it comes together, use your hands. Knead until the dough turns smooth.
That should not take long. Don't overwork.
2. Set dough aside for 15 minutes.
3. flour your working surface and make the flat bread with your hands.
Cut into half and flatten it with the palm of your hand. Use more flour if needed to work it out.
Just form to a crumpet.
4. heat a non stick frying pan and add the flat dough. NO fat is needed here.
Bake from both sides until done. Should not take to long,
approx. maybe 5-10 minutes, depends on how thick you make them.
twist them around from time to time. That worked fine for me.
