Christmas time - what a great time for baking!
All the aromas, flavors, varieties,... I just love it.
I think Christmas season is the time of the year where I love to bake the most :-)
When I bake for our private use, I do not use vegan butter.
I stick with the more healthy version.
It took some attempts to get the dough right. But I am ambitious to get it right!
So for all the people who follow a special detox program,
I think this is a good option to have some treats for Christmas.
If you prefer to use vegan butter like Nuttelex, just replace.
But I think you have to use a bit more butter. I would go with about 20g to 30g.
Those really nice bickies (Plaetzchen) give me a really nice Christmas feeling.
Vanilla and almonds,... just love each other.
Easy to make,... and even more easy to eat, haha.
Bake ahead and store in a metal cookie tin,... and you will have something really good for Christmas.
Perfect for giving someone you love,...or want to impress,... a perfect Christmas gift.
All you need to make 20 is:
70g white rice flour
70g Millet flour
50g almond meal
15g Tapioca starch
10g Vanilla sugar
10g certified organic raw sugar
5m certified organic alcohol free Vanilla***
10ml sweet almond oil (cold pressed)
95ml almond milk
1/4 tsp pink salt
20 almonds
*all ingredients preferred certified organic
***I used this liquid vanilla product
Directions:
1. Add all ingredients into a bowl and mix well.
The dough will be moist and slight sticky, but you should be able to use your hands.
2. form dough to a ball, wrap into cling foil and store in the fridge for a couple of hours.
Or make one day ahead.
3. remove from the fridge and preheat oven to 180C/ 356F
4. use 15g of the dough and form to a ball with your hands.
Put on a baking tray with baking paper.
5. Top with one almond. Just place on top of the ball and push softly down.
Sprinkle with a little bit of vanilla sugar before you put them into the oven.
6. bake for 20 minutes.
7. remove from oven and put on a cooling rack.
When cooled down, dust with icing sugar and a bit of vanilla sugar.
I always mix vanilla sugar and aluminum free certified organic icing.
Store in a cookie tin.
