Bean salads are one of my favorites to eat in summer.
It is a great filler and pretty healthy.
Summer always calls for cold food. This kind of salad is great on its own or as a side.
BBQ, Turkish food, Greek food,... you name it.
We love to enjoy this kind of salads for dinner. As a side for our sandwiches.
Cannelini beans are are very popular in Italy. Specially in Tuscan cuisine.
Cannellini beans are an excellent source of easily digestible bean starch, protein, fiber, minerals, and vitamins.
Cannellini beans are a good source of B vitamins. Specially Folates.
They also are a great source of iron and Magnesium.
This kind of beans are very low in salt as well.
All in one,... a GREAT bean!
I love easy salads. And I remember well that the Turkish cuisine offers a lot of this kind of salads.
I remember well when I went to my Turkish restaurant, that I often also ordered a serve of white bean salad for take away.
This recipe is pretty simple.
Delicious.
Filling.
Healthy!
All you need is:
Ingredients for the salad:
230g (1 tin) of Cannelini beans - if possible organic and no added salt***
50g red capsicum - cut into smaller cubes
50g cucumber - cut into smaller cubes
50 red onion - chopped up
10g micro radish green
***when you are in Australia, Woolies offers certified organic brand (Macro) what does not contain any added salt!
Ingredients for the dressing:
15g mustard
40ml (2tbsp) organic orange juice (or juice of a fresh orange)
20ml (1 tbsp) fresh lemon juice
10ml (2tsp) maple syrup
40ml filtered water
5g (1 small) clove of garlic - grated
10g chopped up Dill (fresh or frozen)
Optional: add a little splash, 1-2 tsp, of organic extra virgin olive oil.
Directions:
1. prepare beans, capsicum, cucumber and onion. Add to a bowl.
2. Add all ingredients for the dressing into a jar or bowl, mix well and add to the beans.
3. Mix well to combine. Chill for about 1 hour or longer.
4. Top with the micro radish green when you serve up.
Enjoy with some fresh bread on its own. Or as as side dish for a bbq etc.
