Pickled Beetroot
Isn't pickled beetroot just something really adorable!
I love it. Always loved it.
I know it is not a salad,... but I think it is great to add to a salad.
So that is the reason why I added this recipe to my salad recipes.
But, my garden recently was so good to me.
I had a nice beet harvest.
And what better to do with it, than to pickle it :-)
For me it is something I could eat every day. And when I have a glass of pickled beets,
I always enjoy it with my dinner sandwich. On the side.
Store bought pickled beets are high in sugar. And also vinegar is a part of it.
I managed to create a recipe without the bad sugar and without vinegar.
And I think this recipe really is good.
And, a little part of my recipe is actually from my granddad!
Mum told me he used to add a hint of cinnamon to the water, when he cooked the beets.
I just love it. It gives the juice a really nice flavor.

When I make my pickles, I always use jars I keep from when I bought jam, gherkins, sauerkraut or such things.
I always keep the jars and re use them for my own creations. So this is what I used to make my pickles.
You can use a 500ml/g jar.
Perfect recycling as well. Why always throw glasses away, when you can use them again!
Just make sure its totally clean. I always cook my glasses for 5 minutes in boiling water.
Also the lid. That makes them free of any bacteria etc.
Ok, now let's get started....
To make 1 jar you need:
500g fresh beets (approx. 3 middle sized beets) - skin removed and cut into small slices
450ml filtered water
1/8 tsp ground clove spice (or 2 big whole cloves or 3 smaller ones)
1/8 tsp ground cinnamon
1 small bay-leafe
1/2 tsp pink Himalaya salt
3 tbsp fresh squeeze lemon juice
3 tbsp Maple syrup
Directions:
1. remove skin from beets and cut into half. Cut the half in half and slice.
Or cube, whatever shape you prefer. Add to a pot.
2. add water and all other ingredients.
3. bring to the boil and turn down the heat to a simmer. Simmer for about 15 minutes.
4. Turn off the heat. Add the beets into a very clean jar. Fill up with the juice and close the lid.
Turn the jar up side down and leave for 10 minutes. Turn again and leave to cool down.
This should make the jar vacuum sealed.
5. Store at a cooler place or the fridge for 3-4 days until you open it.
6. ENJOY
