DUMPLINGS,... Jesus, I ate tons of them in my life. And I never get sick of this delicious little balls.
German dumplings, potato dumplings, are a very popular side dish in Germany,
Mostly served with something what has a lot of gravy. Like a roast.
Or Hungarian Goulash.
There are different types of dumplings, but this is the most common one and most loved one.
Simple and easy to make.
To make dumplings you need floury potatoes. Once I used the wrong ones, waxy ones.
What a disaster, haha. But I remember they were not to bad, at least we could eat them.
But please use floury potatoes. They really work best.
To make 5 middle sized dumplings you need:
450g jacket potato --- cooked potato in their skin,... cooled down.
2 tbsp potato starch
1/8 tsp nutmeg
1/2 tsp pink salt
Direction:
1. cook the potatoes and cool down complete.
2. remove skin and roughly grate the potato into a bowl.
3. add potato starch, nutmeg and salt,... and bring it together to a smooth dough.
4. form with your hand some dumplings.
When the dough is to sticky, add some more starch on your hands and shape.
5. use a big pot and bring water to the boil.
6. add dumplings and boil for 10-15 seconds. Turn completely down the heat.
It only should have a very, very low simmer,... rather even no simmer.
Shut the lid and wait until the dumplings float on top.
That should take approx . 15 minutes, depends on the size you made.
7. plate up and enjoy :-)
