Chocolate Mousse - a world wide dessert most people love, right.
I always loved a creamy chocolate mousse. With some vanilla custard, I never said no to that.
Usually I cook this dessert with plant based milk. To make it a mousse, I carefully add aquafaba.
This is a lot of work. BUT,... I found a much faster, easier and actually far more healthy way to make a chocolate mousse.
Thanks to my precious friend Mare, I got this idea.
She recently made a couple of times chocolate mousse with sweet potato!
Sweet potato,... brrrrr,... I am not really a fan of.
But somehow she talked about it again,... and even showed me her dessert. It really looked so creamy. Hm.
Maybe I should give it a go. Maybe this works for me as well.
And it did! I am amazed how chocolate moussey it turned.
Really. And the best, I can't taste the sweet potato :-)
It keeps a bit of structure from the fiber. But that is what it makes so mousse like.
I love it.
Sweet potatoes are actually a pretty healthy food.
Packed with important vitamins and minerals.
Like Vitamin A, Vitamin B6, Vitamin C, Copper, Iron, Magnesium, Calcium.
A lot of fiber....
So much goodness in just one sweet potato. Sometimes I have sweet potato chips. That is a way I like to eat sweet potato.
But that is pretty much it. So I am really happy to have found another way to bring some sweet potato into my life.

And cocoa, I know a lot of people cut out cocoa because of a detox program.
But for me there is nothing what can replace cocoa.
And cocoa has a lot of goodness too. Zinc, Iron and Selenium for example. Magnesium. To good to miss out on that.
But if you don't like to use cocoa, go with Carob.
I personally do not like it. But I see a lot of people who do the detox, which go with Carob. Your choice.
How much of the Carob you have to use, I can't tell. I never made it.
But I hope you stick with my recipe and will be amazed like me about the result.
This dessert is really made easy peasy and quick.
I choose to steam the potato to keep all the goodness in it. I worked out a nice recipe.
It took me a bit to adjust the right amounts, but the way it turned up, is for me just perfect.
So,...
To make 2 serves of this dessert you will need:
400g steamed sweet potato - skin removed
3 tbsp organic cocoa powder
The seeds of one small vanilla pod
1/8 tsp pink Himalaya salt
3/4 cup plant based milk***
1,5 tbsp pure Maple syrup
***I used Bonsoy japanese soy milk. But feel free to use whatever plant based milk you like!
Directions:
1. peel sweet potato and cut into small pieces. Add to a steamer and steam until soft.
Cool down.
2. Add to a high speed food processor with all ingredients.
Process until creamy.
3. fill into a container and chill in the fridge for a couple of hours.
Tip:
I like to add some orange zest to my chocolate mousse.
But because my partner does not like it, I solved this problem this way, I cooked an orange custard!
This really was a nice combination. You can also choose vanilla custard.
Berries, cherries, whatever you like to top the mousse with.
I cooked the orange custard with a bit of plant based milk,
zest of one fresh organic orange, orange blossom water, maple syrup, a pinch of salt,...
potato starch to thicken the custard.
